Diet Questions - Breakfast

Over the last year I’ve had a few questions about what I’m eating. Friends and colleagues have seen me get to a healthy weight with changes in training and nutrition. I’ll start to share a few of the meals that I eat and do my best to give the approximate recipes when I do. Ed at Ultimate Health & Performance set up my nutrition plan for all of 2019 and if you want someone to hold you accountable, he’s your guy. I had weigh ins and calipers used every week or two so we could track the changes in my body and most of the weight I lost was simply due to changes in what I ate. I certainly got stronger with the workouts but diet was the biggest lifestyle change.

These days I haven’t been as strict with my eating but now that the revised race schedule is taking shape, I’m about 80% to where I need to be with my food consumption. My favorite meal of the day is my first one. I’m really consistent with breakfast and growing up I really disliked what I’m eating now. About five years ago before the Nantucket Triathlon I had a few minutes talking with an athlete who has since become a friend and he swore by oatmeal with berries every morning. I’ve adopted the same strategy with my first meal. Occasionally I’ll add egg whites on the side or top the oatmeal with an over easy egg but most of the time it’s the following:

1/2 cup quick oats
1 tablespoon ground chia & flax seed mix
1/4 cup of blueberries
pinch of salt

Additional variations will include adding honey or cinnamon and I always have a cup of black coffee or tea with breakfast. It’s easy, filling and healthy.
